Kobbari (Coconut) Laddu is one of my all-time favorite
sweet; whenever there is fresh coconut at home, my mother prepares these lovely
laddu’s;
We got couple of coconut during vinayaka chavithi
pooja and I have utilized them well in preparing kobbari laddu;
Ingredients:
1. Grated
coconut - 2 cups
2. Milk
– 1.5 cups
3. Sweetened
condensed milk – 180 grams
4. Sugar
– 4 tbsp, optional
5. Cardamom
– 4
6. Ghee
or butter – 1 tbsp to grease the plate
Method:
1. Break
coconut and remove kernel from shell;
2. Cut
coconut into small 1' pieces; Grate coconut in a mix grinder;
3. Heat
a heavy bottomed pan, add grated coconut, fry stirring on low flame for about 5
mins;
4. Add
milk to coconut, cook on medium flame stirring continuously;
5. When
bubbles appear in mixture, add sugar and sweetened condensed milk;
6. Once
the mixture is thick, add cardamom powder and combine well;
7. Cook
stirring till the mixture starts leaving the sides of the pan;
8. Grease
a plate with ghee or butter and transfer the mixture on to it;
9. Spread
the mixture evenly using ladle and set it aside for few minutes until its warm
to touch;
10. Divide
mixture into lemon sized balls and roll them properly to make laddu’s;
Notes:
1. You
can remove the brown portion (outer layer) of kernel using peeler if you want
your laddu’s to be white in color;
2. Continuous
stirring of the mixture is very important;
3. Smear
ghee on your palm while rolling laddu to get smooth outer edges
4. Traditional
way of preparing these laddu’s uses only milk and takes very long time but I
have used condenses milk to make it quickly;
